Faux "Good For You" Dessert



About 10 years ago, I worked with a lovely old man in Arizona who preferred lemon bars to any other dessert on Earth. I made these for him quite often and hope you'll enjoy them too!



Lemon Bars

- 1 cup confectioner's/powdered sugar (plus a bit more for decoration)
- 1 1/8th cup all purpose flour
-1/3 cup, freshly squeezed lemon juice
-1/2 cup butter, room temperature
- 1 1/2 teaspoons grated lemon zest
- 1/4 teaspoon baking powder
-2 eggs

Preheat oven to 325 degrees. In a medium sized bowl, mix together 1/3 cup confectioner's sugar, flour and softened butter until thoroughly combined. Take the mixture and press it into the bottom of an 11" x 7" pan. Bake in the oven for 20-25 minutes or until the crust is lightly browned.

Next, whisk together 2/3 cup of confectioner's sugar, eggs, lemon juice and lemon zest until thoroughly combined. Check the crust in the oven. Just before the crust is finished baking, add the baking powder into the lemon mixture and stir. Remove the crust from the oven and pour the lemon mixture onto the hot crust, and even it out with a spatula. Return to the oven and bake for another 25 minutes.

When the lemon bars are cool, dust them with a little bit more powdered sugar and serve!
